Cooking instructions
Here’s how you can cook Araliya rice the right way. You can use either a gas cooker or a microwave oven.
Open Pan
Bring a large pan of water to a boiling point. Add rice, stir, return
to a medium boil and cook uncovered for 10 minutes. Drain and rinse
with more boiling water.
Covered Pan
Put measured rice and cold water (1 ½ times of rice) into a good sized
heavy based pan. Once reached boiling point, stir well. Cover the pan,
reduced heat to medium, wait for 10 minutes. Turn off the heat. Stir
once more, keep covered for 5 minutes.
Microwave method
Put measured rice and cold water (1 ½ times of rice) into a deep
microwave bowl. Cover the bowl and cook on ‘high’ for 6 minutes.
Uncover and stir well. Cover again and cook on ‘defrost’ for 6 minutes.
Turkish Rice

Astra Margarine | 50g |
Cleaned Prawns | 225g |
Bacon | 50g |
Tomatoes | 3 |
Flour | 1 tablespoon |
Araliya Chili Powder | 1 teaspoon |
Araliya Cardamoms | 10 |
Araliya Cloves | 2 |
Araliya Cinnamon | ½” piece |
Araliya Rampe | 8” (or equal) |
Chopped Onions | 2 tablespoons |
Curd | 2 tabs |
Salt | as required |
Instructions:
Wash chicken well, marinade with lime juice and salt for 1 hour and wash the chicken again. Immerse the whole chicken in half saucepan of water with the cardamom, cloves, cinnamon and rampe. Add salt and boil the chicken until it is tender. Leave it to cool.
Cooking of rice
Cook the washed and drained rice with the stock and the additional water upto 1 ½” above the rice level.
Filling
Cut the chicken into normal serving pieces. Sprinkle chicken with the seasonal flour. Heat the butter, fry the bacon then remove the bacon from the pan into the bowl. Fry the onions then add prawns, tomatoes and cook for 5 minutes. Next add the fried bacon and chicken from the bowl and mix all the ingredients in the pan. Add ½ cup of water to moisten the mixture. Cook for a few minutes and remove from heat.
